cooking solo

Eric worked late tonight, so I came home to an empty apartment. My stomach being equally empty, and our fridge full from Saturday's Stop & Shop excursion, I whipped up some dinner -- roasted plum tomatoes, guacamole (more like a chunky avacado salad), and yellow rice with peas. Yum.

I don't mind cooking for one, and welcomed the opportunity tonight.

But good thing I'm not left to finish the homemade ice cream all on my own. Though it would be a good excuse to throw an old-fashioned ice cream social. Hmmm...
